Apart being absolute winners of the Gourmet Fest Bratislava 2013, chefs of Tatry mountain resorts, a.s. (TMR) hotels won the 1st Tatra food festival – Food Fest Tatry on their own ground, too.
All the delicious culinary art was judged by professionals and a jury composed of ordinary people. “The task was very simple – to use Tatra ingredients. We were trying to create a menu of regional ingredients and get thus as close to the Tatras as possible. That´s why we won the prize,“ said Miloš Červenka, chef of the FIS Hotel***. “Experience is priceless. On the other hand, I enjoyed entering the competition. People reacted very well. They came back to our stall on the second day, too. And this made us really happy,“ added Jaroslav Uhlár, chef of the Grandhotel Praha****.
The winning couple of real master chefs prepared a 4-course menu: starter – home-made pork pâté with glazed shallot and roasted baguette; soup – celery cream soup with roast trout filet, thyme and stir-fried spinach; main course – wild boar ragout with king bolete mushrooms, forest fruits and a breadcrumbs dumpling; dessert – apple sponge cake with fruit filling, roasted almond cover, liquid chocolate and chestnut mousse.
Although the weather was not very favourable, the appetite to taste the best Tatra specialities was much stronger. And Tatranská Lomnica enjoyed a great weekend show in the open air with quite a good turnout. “The organisers did their best to keep everything flawless. As the weather was not on our side, we were very surprised by a high turnout on Saturday. There were enough people to cook for, eventually,“ smiled the awarded chef of the FIS Hotel***.
